STUFFED DATES
Sweet
Ingredients:
- 12 Medjool dates 
- 1/4 cup peanut butter (or almond butter) 
- 1 tablespoon honey 
- 2 tablespoons unsweetened coconut flakes 
- 2 tablespoons mini chocolate chips 
Directions:
- Prepare the Dates: - Carefully make a small slit along the length of each date and remove the pit. Be sure not to cut all the way through. 
 
- Stuff the Dates: - Using a small spoon or a piping bag, fill each date with about 1 teaspoon of peanut butter. 
 
- Add Toppings: - Drizzle a little honey over the peanut butter filling. 
- Sprinkle with coconut flakes and mini chocolate chips. 
 
- Serve: - Arrange the stuffed dates on a serving platter. They can be enjoyed immediately or refrigerated for later. 
 
Savory
Ingredients:
- 12 Medjool dates 
- 1/2 cup soft goat cheese (or cream cheese, mascarpone) 
- 1/4 cup chopped nuts (such as almonds, walnuts, or pistachios) 
- 1 tablespoon honey (optional) 
- 1/2 teaspoon fresh thyme or rosemary, chopped (optional) 
Directions:
- Prepare the Dates: - Carefully make a small slit along the length of each date and remove the pit. Be sure not to cut all the way through. 
 
- Stuff the Dates: - Using a small spoon or a piping bag, fill each date with about 1 teaspoon of goat cheese. 
 
- Add Toppings: - Sprinkle the chopped nuts over the goat cheese filling, gently pressing them into the cheese so they stick. 
- Drizzle a little honey over the stuffed dates if desired. 
- Add a sprinkle of fresh thyme or rosemary for an aromatic touch.
