COCONUT POACHED WHITEFISH
Ingredients:
- 1 lemon, sliced 
- Fresh dill, chopped (measured to taste) 
- 5-6 fresh garlic cloves, smashed 
- Grated ginger (to taste) 
- Fresh cod fillets 
- 1 can of coconut milk 
- Rice or grain of your choice! 
Instructions:
- Sauté Aromatics: In a large pan, heat olive oil over medium heat. Add smashed garlic cloves and grated ginger, sautéing until fragrant. 
- Add Lemon Slices: Place sliced lemons in the pan. 
- Layer the Cod: Place the fresh cod fillets on top of the lemon slices. 
- Add Fresh Dill: Sprinkle the chopped fresh dill over the cod. 
- Pour Coconut Milk: Pour one can of coconut milk over the fish until the cod is fully submerged. 
- Poach the Cod: Cover the pan and cook the cod for approximately 10-15 minutes, or until the fish is opaque and flakes easily with a fork. 
- Serve: I like to enjoy this fish over jasmine or coconut rice!
